# Expert Tips:

01 -
  • The chickpeas get genuinely crispy and addictive, nothing soft or mushy here.
  • Everything roasts at the same temperature so you're not juggling multiple oven racks.
  • It tastes just as good cold the next day, making it the perfect meal prep situation.
  • That tahini dressing is simple enough to memorize but tastes like you spent way more effort than you did.
02 -
  • Do not skip the towel-drying step on the chickpeas no matter how hungry you are, otherwise they steam instead of crisp and the entire bowl loses its texture appeal.
  • The tahini dressing gets thicker as it sits, so make it slightly thinner than you think it should be.
03 -
  • If your tahini tastes bitter or grainy, you have old tahini, and it's worth replacing because this dressing is only as good as your base ingredient.
  • The secret to crispy chickpeas is making sure they're completely dry before seasoning and not crowding the baking sheet, so give them room to breathe.
